Chewy Hamhung cold noodles started in 1953 by a grandmother from the North — famous for its spicy raw-skate topping.

It began when Han Hye-sun, who fled south from Hamgyeong Province during the Korean War, sold her hometown's starch noodles. The signature is Hamhung-style bibim naengmyeon: noodles pulled from potato and sweet-potato starch, springy to the bite, topped with a spicy raw-skate salad.
